Description

A refreshing salad featuring summer berries, candied walnuts, and a light dressing, perfect for picnics and light dinners.


Ingredients

  • 1 tablespoon butter
  • 1 cup walnuts (barely chopped)
  • 1 tablespoon brown sugar
  • 4 to 5 ounces lettuce mix
  • 2 cups strawberries (cut in half or quarters)
  • 1 cup blueberries
  • ½ cup goat cheese or feta cheese (crumbled)
  • ⅛ cup red onion (sliced, optional)
  • ¼ cup fresh basil leaves (optional)
  • ½ teaspoon kosher salt
  • ½ teaspoon dijon mustard
  • 2 teaspoons honey
  • 1½ tablespoons red wine vinegar or lemon juice
  • 2 tablespoons olive oil


Instructions

  1. Wash the strawberries and blueberries thoroughly, then slice the strawberries in half or quarters.
  2. Heat a skillet over medium-low heat. Add the butter, walnuts, and brown sugar. Toss for about 3 minutes until fragrant, then cool slightly.
  3. Combine the kosher salt, dijon mustard, honey, red wine vinegar (or lemon juice), and olive oil in a jar. Shake well to create your dressing.
  4. Add the lettuce mix along with half of each ingredient, including the candied walnuts, to a large bowl. Toss well to combine.
  5. Transfer the mixture to a serving platter, sprinkle with the remaining ingredients, and drizzle with extra dressing. Serve fresh for maximum delight.

Notes

For best freshness, store the salad in an airtight container in the refrigerator for up to 2 days, but it’s best enjoyed fresh.
