Description

A straightforward recipe for a golden, crisp baguette with a soft, chewy interior, perfect for weeknight dinners or casual entertaining.


Ingredients

  • 4 cups all-purpose flour
  • 1½ cups warm water (100–110°F / 38–43°C)
  • 2 teaspoons fine salt
  • 1 packet instant yeast (about 2¼ teaspoons)
  • 1 tablespoon olive oil (optional)
  • 12 teaspoons sugar or honey (optional)
  • Sesame or poppy seeds for topping (optional)


Instructions

  1. Mix dry ingredients by whisking together the flour, salt, and instant yeast until evenly distributed.
  2. Add warm water (and olive oil, honey, or sugar if using) and stir until a shaggy dough forms.
  3. Cover the bowl and let the dough rest for 15–20 minutes (optional).
  4. Turn the dough onto a floured surface and knead for 6–8 minutes until smooth and elastic.
  5. Place the dough in an oiled bowl, cover, and let rise for 1–1¼ hours until doubled in size.
  6. Deflate the dough gently, divide and shape into baguettes, then proof uncovered for 30–45 minutes.
  7. Preheat the oven to 475°F (246°C), score the loaves, and bake for 20–25 minutes until golden brown.
  8. Cool on a wire rack before slicing.

Notes

For the best crust, bake on a preheated stone or heavy sheet pan. Use a sharp blade for scoring for better oven spring.
