Description

A comforting and easy baked salmon loaf made from canned salmon mixed with breadcrumbs, eggs, onion, dill, and lemon.


Ingredients

  • 1 can (14.75 oz) high-quality canned salmon, drained
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 2 tablespoons fresh dill (or 1 tablespoon dried dill)
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan.
  2. Drain the canned salmon thoroughly and flake into a mixing bowl.
  3. Mix the salmon with breadcrumbs, onion, eggs, dill, lemon juice, salt, and pepper until just combined.
  4. Press the mixture evenly into the prepared loaf pan.
  5. Bake for 45–50 minutes until golden and firm in the center.
  6. Cool for 10–15 minutes before slicing.

Notes

For gluten-free, substitute breadcrumbs with a gluten-free option. Adjust seasoning if using low-sodium salmon.
