Description

A delightful cake combining fresh strawberries and creamy custard, perfect for family gatherings and celebrations.


Ingredients

  • 2 cups All-Purpose Flour (optionally gluten-free)
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 1 cup Unsalted Butter
  • 1 cup Granulated Sugar (brown sugar works too)
  • 3 large Eggs (you can substitute with flax eggs)
  • 2 tsp Vanilla Extract (almond extract adds a unique touch)
  • 1 cup Whole Milk (with options for almond or soy milk)
  • 1/2 cup Sugar (for the custard)
  • 2 tbsp Cornstarch
  • 4 large Egg Yolks (consider chia seeds for a vegan option)
  • 2 cups Fresh Strawberries (frozen is okay, just drain them)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your cake pans to prevent sticking.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt, then set this mixture aside.
  3. In a separate large bowl, cream together the butter and granulated sugar until it becomes light and fluffy.
  4. Add the eggs one at a time to the butter mix, followed by the vanilla extract.
  5. Gradually incorporate the dry ingredients into the butter mixture, alternating with the milk, ensuring everything blends well.
  6. Pour the batter into your prepared cake pans, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. While the cake cools, make the custard: In a saucepan, whisk together the sugar, cornstarch, and egg yolks.
  8. Slowly mix in the milk and cook over medium heat while stirring constantly until the mixture thickens.
  9. Once thickened, remove from heat and let it cool slightly before folding in the strawberries.
  10. When the cake has completely cooled, layer the custard between the cake layers and top with additional strawberries.
  11. Chill in the fridge for optimal flavor and texture before serving.

Notes

Store the cake in the refrigerator for up to 4 days. For longer storage, freeze individual slices wrapped securely in plastic wrap.
