Ingredients
- 2 cups All-Purpose Flour (optionally gluten-free)
- 1 tbsp Baking Powder
- 1 tsp Salt
- 1 cup Unsalted Butter
- 1 cup Granulated Sugar (brown sugar works too)
- 3 large Eggs (you can substitute with flax eggs)
- 2 tsp Vanilla Extract (almond extract adds a unique touch)
- 1 cup Whole Milk (with options for almond or soy milk)
- 1/2 cup Sugar (for the custard)
- 2 tbsp Cornstarch
- 4 large Egg Yolks (consider chia seeds for a vegan option)
- 2 cups Fresh Strawberries (frozen is okay, just drain them)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour your cake pans to prevent sticking.
- In a mixing bowl, whisk together the flour, baking powder, and salt, then set this mixture aside.
- In a separate large bowl, cream together the butter and granulated sugar until it becomes light and fluffy.
- Add the eggs one at a time to the butter mix, followed by the vanilla extract.
- Gradually incorporate the dry ingredients into the butter mixture, alternating with the milk, ensuring everything blends well.
- Pour the batter into your prepared cake pans, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- While the cake cools, make the custard: In a saucepan, whisk together the sugar, cornstarch, and egg yolks.
- Slowly mix in the milk and cook over medium heat while stirring constantly until the mixture thickens.
- Once thickened, remove from heat and let it cool slightly before folding in the strawberries.
- When the cake has completely cooled, layer the custard between the cake layers and top with additional strawberries.
- Chill in the fridge for optimal flavor and texture before serving.
Notes
Store the cake in the refrigerator for up to 4 days. For longer storage, freeze individual slices wrapped securely in plastic wrap.
