  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Cream the softened butter until smooth in another bowl. Add in the buttermilk, eggs, and vanilla extract, mixing until well combined.
  4. Incorporate the wet ingredients into the dry ingredients, stirring gently until just combined—be careful not to over-mix.
  5. Fold in the diced strawberries to ensure they’re evenly distributed in the batter.
