Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Cream the softened butter until smooth in another bowl. Add in the buttermilk, eggs, and vanilla extract, mixing until well combined.
- Incorporate the wet ingredients into the dry ingredients, stirring gently until just combined—be careful not to over-mix.
- Fold in the diced strawberries to ensure they’re evenly distributed in the batter.
- Blend the softened cream cheese, powdered sugar, and lemon juice until smooth in a small bowl.
- Fill each muffin cup halfway with batter, add a dollop of the cream cheese mixture, then cover with additional batter until nearly full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
