  • 1 (8 oz) package cream cheese (softened; low-fat is fine)
  • 1 cup granulated sugar (or coconut sugar for a lighter option)
  • 1 teaspoon vanilla extract
  • 1 box yellow cake mix (or gluten-free cake mix)
  • 1/2 cup unsalted butter (melted; coconut oil is great for dairy-free)
  • 1 cup milk (almond or oat milk for dairy-free)
  • 1/2 teaspoon salt
  • Powdered sugar (for dusting, optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the sliced strawberries by tossing them with 1/4 cup of granulated sugar and letting them sit for about 10 minutes to release their juices.
  3. Mix the softened cream cheese with the remaining 3/4 cup of sugar and the vanilla extract until smooth and creamy.
  4. Combine the yellow cake mix, melted butter, milk, and salt in a large mixing bowl; stir until just combined.
  5. Layer half of the cake batter in a greased 9×13-inch baking dish, followed by the cream cheese layer, marinated strawberries, and the remaining cake batter.
  6. Bake for 45-50 minutes until the top is golden and a toothpick comes out clean.
