Description
A delightful dessert that combines strawberries and cream cheese within a warm, fluffy cake, perfect for gatherings or satisfying your sweet tooth.
Ingredients
- 2 cups fresh strawberries (sliced; frozen can work too)
- 1 (8 oz) package cream cheese (softened; low-fat is fine)
- 1 cup granulated sugar (or coconut sugar for a lighter option)
- 1 teaspoon vanilla extract
- 1 box yellow cake mix (or gluten-free cake mix)
- 1/2 cup unsalted butter (melted; coconut oil is great for dairy-free)
- 1 cup milk (almond or oat milk for dairy-free)
- 1/2 teaspoon salt
- Powdered sugar (for dusting, optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the sliced strawberries by tossing them with 1/4 cup of granulated sugar and letting them sit for about 10 minutes to release their juices.
- Mix the softened cream cheese with the remaining 3/4 cup of sugar and the vanilla extract until smooth and creamy.
- Combine the yellow cake mix, melted butter, milk, and salt in a large mixing bowl; stir until just combined.
- Layer half of the cake batter in a greased 9×13-inch baking dish, followed by the cream cheese layer, marinated strawberries, and the remaining cake batter.
- Bake for 45-50 minutes until the top is golden and a toothpick comes out clean.
- Cool for about 10-15 minutes before dusting with powdered sugar and serve.
Notes
For a delightful twist, consider adding a splash of almond extract or a sprinkle of cinnamon in the cake mix.
