A quick and satisfying pizza bowl featuring creamy cottage cheese, fresh vegetables, and melty mozzarella, perfect for busy weeknights or a light lunch.
Ingredients
- 1 cup cottage cheese (preferably small-curd)
- 1/2 cup cherry tomatoes, halved
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, diced
- 1/4 cup pizza sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup mozzarella cheese, shredded
- Fresh basil for garnish (optional)
Instructions
- Mix the cottage cheese, pizza sauce, and Italian seasoning until combined.
- Fold in the halved cherry tomatoes, diced bell pepper, and diced red onion until evenly distributed.
- Taste and season with salt and pepper to your preference.
- Sprinkle the shredded mozzarella evenly over the top of the bowl.
- Place the bowl under a hot broiler for 1–2 minutes until bubbly and slightly golden (optional).
- Serve immediately, optionally garnished with fresh basil.
Notes
Salt sparingly at first, keep textures distinct by dicing vegetables uniformly, and make sure to use a broiler-safe dish if broiling.
