Description

A quick and satisfying pizza bowl featuring creamy cottage cheese, fresh vegetables, and melty mozzarella, perfect for busy weeknights or a light lunch.


Ingredients

  • 1 cup cottage cheese (preferably small-curd)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup pizza sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup mozzarella cheese, shredded
  • Fresh basil for garnish (optional)


Instructions

  1. Mix the cottage cheese, pizza sauce, and Italian seasoning until combined.
  2. Fold in the halved cherry tomatoes, diced bell pepper, and diced red onion until evenly distributed.
  3. Taste and season with salt and pepper to your preference.
  4. Sprinkle the shredded mozzarella evenly over the top of the bowl.
  5. Place the bowl under a hot broiler for 1–2 minutes until bubbly and slightly golden (optional).
  6. Serve immediately, optionally garnished with fresh basil.

Notes

Salt sparingly at first, keep textures distinct by dicing vegetables uniformly, and make sure to use a broiler-safe dish if broiling.
