Ingredients

  • 2 cups grated hash browns (fresh or frozen)
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup milk
  • Salt and pepper to taste
  • Cooking spray or oil for greasing


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. Combine the grated hash browns, eggs, milk, salt, and pepper in a large mixing bowl and mix thoroughly.
  3. Stir in the shredded cheddar cheese and crumbled bacon bits.
  4. Spoon the mixture evenly into the prepared muffin tin cups, filling each about 3/4 full.
