Ingredients
- 2 cups grated hash browns (fresh or frozen)
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled bacon
- 1/2 cup milk
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin.
- Combine the grated hash browns, eggs, milk, salt, and pepper in a large mixing bowl and mix thoroughly.
- Stir in the shredded cheddar cheese and crumbled bacon bits.
- Spoon the mixture evenly into the prepared muffin tin cups, filling each about 3/4 full.
- Bake for 25-30 minutes or until golden brown.
