Ingredients

  • 4 large eggs
  • 1 cup cooked sausage, crumbled
  • 1 cup shredded cheese (cheddar recommended)
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Butter or oil for cooking


Instructions

  1. Whisk the eggs with a pinch of salt and pepper until fully blended.
  2. Heat butter or oil in a skillet over medium heat. Once hot, add the beaten eggs and scramble until fully cooked.
  3. Stir in the crumbled sausage and shredded cheese, allowing the cheese to melt into the eggs.
  4. Lay each tortilla flat and divide the warm egg mixture evenly among them.
  5. Starting from one end, roll each tortilla tightly to encase the filling.
  6. Optionally, grill the roll-ups in the skillet until they are golden brown on the outside.
