Ingredients
- 4 large eggs
- 1 cup cooked sausage, crumbled
- 1 cup shredded cheese (cheddar recommended)
- 4 large flour tortillas
- Salt and pepper to taste
- Butter or oil for cooking
Instructions
- Whisk the eggs with a pinch of salt and pepper until fully blended.
- Heat butter or oil in a skillet over medium heat. Once hot, add the beaten eggs and scramble until fully cooked.
- Stir in the crumbled sausage and shredded cheese, allowing the cheese to melt into the eggs.
- Lay each tortilla flat and divide the warm egg mixture evenly among them.
- Starting from one end, roll each tortilla tightly to encase the filling.
- Optionally, grill the roll-ups in the skillet until they are golden brown on the outside.
- Serve warm with fresh fruit, sour cream, salsa, or your favorite hot sauce.
