Description

A buttery, flaky parcel of comfort with a tender salmon fillet wrapped in crispy puff pastry and a creamy, garlicky spinach filling.


Ingredients

  • 4 cups fresh spinach, chopped
  • 4 ounces cream cheese, softened
  • 2 cloves garlic, minced
  • 1 small shallot, finely diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1.5 pounds skinless, center-cut salmon fillet
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté the minced garlic and diced shallot in olive oil for about 2 minutes until fragrant.
  3. Add the chopped spinach and cook until just wilted, about 2–3 minutes. Remove from heat.
  4. Transfer the spinach mixture to a bowl and stir in the cream cheese, salt, and black pepper until smooth.
  5. Roll out the thawed puff pastry, place the cooled spinach mixture in the center, and position the salmon fillet on top. Fold the pastry over the salmon, pinching to seal the seams.
  6. Brush pastry with beaten egg, score the top lightly with a knife, and bake for 25–30 minutes until golden brown. Let rest for 5 minutes before slicing.

Notes

Use center-cut, evenly thick salmon for uniform cooking. Squeeze excess moisture from spinach to prevent sogginess in pastry.
