Description
A refreshing quinoa salad packed with vibrant flavors, perfect for summer BBQs or meal prep.
Ingredients
- 1 cup uncooked quinoa
- ¼ cup extra virgin olive oil
- 1 ½ teaspoons fine sea salt (divided)
- 3 tablespoons lemon juice
- 1 garlic clove, minced
- 1 medium cucumber, diced
- 1 large tomato, diced
- 3 green onions, chopped
- 1 cup flat-leaf parsley, chopped
- ¼ cup fresh mint, minced
Instructions
- Rinse the quinoa under cold water for about 30 seconds to remove any bitterness.
- Combine the rinsed quinoa with 1 ½ cups of water and ½ teaspoon of salt in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and let it simmer for about 10 minutes.
- Turn off the heat and leave covered for an additional 5 minutes. Fluff it gently with a fork once it has cooled.
- Whisk together olive oil, lemon juice, minced garlic, and the remaining ½ teaspoon of salt in a large bowl.
- Chop the cucumber, tomato, green onions, parsley, and mint, and add to the bowl with the dressing.
- Add the cooled quinoa to the mixing bowl and gently combine everything until well mixed.
- Taste and adjust seasoning with additional salt or lemon juice as desired.
- Serve chilled or at room temperature. Enjoy!
Notes
For extra flavor, toast the quinoa in the saucepan for a couple of minutes before adding water. Always taste as you go and adjust based on your preferences.
