Ingredients

  • 1 cup rolled oats
  • 1 cup milk (or non-dairy alternative)
  • 1/2 cup pumpkin puree
  • 1/2 cup Greek yogurt (or non-dairy alternative)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • A pinch of salt


Instructions

  1. Combine the rolled oats with your chosen milk in a bowl or jar.
  2. Add the pumpkin puree and Greek yogurt, mixing thoroughly until blended.
  3. Sweeten the mixture with maple syrup, then stir in vanilla extract, pumpkin spice, and a pinch of salt.
  4. Incorporate all ingredients until completely mixed.
  5. Cover the bowl or jar and refrigerate overnight or for a minimum of four hours.
  6. In the morning, give your oats a good stir. If you’d like a creamier texture, add more milk.

Notes

Store any leftovers in an airtight container in the refrigerator for up to four days. Can be frozen in portions; thaw in the fridge overnight.
