Ingredients
- 1 cup rolled oats
- 1 cup milk (or non-dairy alternative)
- 1/2 cup pumpkin puree
- 1/2 cup Greek yogurt (or non-dairy alternative)
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin spice
- A pinch of salt
Instructions
- Combine the rolled oats with your chosen milk in a bowl or jar.
- Add the pumpkin puree and Greek yogurt, mixing thoroughly until blended.
- Sweeten the mixture with maple syrup, then stir in vanilla extract, pumpkin spice, and a pinch of salt.
- Incorporate all ingredients until completely mixed.
- Cover the bowl or jar and refrigerate overnight or for a minimum of four hours.
- In the morning, give your oats a good stir. If you’d like a creamier texture, add more milk.
Notes
Store any leftovers in an airtight container in the refrigerator for up to four days. Can be frozen in portions; thaw in the fridge overnight.
