Description
Crisp, golden chicken breasts coated in savory Parmesan and breadcrumbs, finished in the oven for a juicy inside.
Ingredients
- 4 boneless, skinless chicken breasts (about 1–1.25 lb total)
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (plain or panko)
- 2 eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and freshly ground black pepper, to taste
- 2–3 tablespoons olive oil for frying
Instructions
- Preheat the oven to 400°F (200°C). Lightly oil a baking dish or line it with foil for easier cleanup.
- Combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, and a pinch of salt and pepper in a medium bowl; toss to mix.
- Beat the eggs until smooth in another bowl.
- Pat the chicken dry with paper towels and pound to an even thickness (about 1/2 inch) for uniform cooking.
- Dip each breast into the beaten eggs, then press into the breadcrumb-Parmesan mixture.
- Heat olive oil in a skillet over medium heat until shimmering, then add chicken.
- Brown the chicken for 3–4 minutes per side until golden.
- Transfer the chicken to the baking dish and bake for 20–25 minutes, or until the internal temperature hits 165°F (74°C).
- Let the chicken rest for 3–5 minutes before serving.
Notes
For gluten-free, use gluten-free breadcrumbs or crushed gluten-free cereal. For dairy-free, use nutritional yeast plus gluten-free crumbs.
