Description
A comforting one-pot meal featuring crispy-seared chicken and buttery garlic rice, perfect for weeknights.
Ingredients
- 4 boneless, skinless chicken breasts (about 1 1/2–2 pounds total)
- 4 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 3 tbsp unsalted butter, divided
- 2 tbsp fresh parsley or thyme, chopped
- 1 tbsp olive oil
- 2 tbsp low-sodium soy sauce
- Salt and freshly ground black pepper to taste
Instructions
- Pound the chicken breasts to even thickness and season with salt and pepper.
- Warm a large pot over medium heat and add olive oil and 2 tbsp of butter.
- Sear the chicken for 3–4 minutes on each side until golden brown, then remove and cover.
- Reduce heat and sauté minced garlic for 30–45 seconds until fragrant.
- Stir in the uncooked rice and toast for 30–45 seconds.
- Pour in chicken broth and soy sauce, scraping up browned bits.
- Nestle the seared chicken on top, cover, and simmer for 18–22 minutes.
- Remove from heat and stir in the remaining butter and herbs. Let rest for 5 minutes before serving.
Notes
For a lower-sodium dish, use unsalted broth and omit added salt. Serve with a green salad or steamed vegetables.
