Description

A vibrant and delicious no-bake pie with a creamy filling and a fresh berry swirl, perfect for summer celebrations.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup sugar (for the berry swirl)


Instructions

  1. Prepare the crust: In a medium bowl, combine the graham cracker crumbs with the melted butter. Press the mixture evenly into the bottom of a pie dish. Refrigerate for about 30 minutes to set.
  2. Beat the softened cream cheese with powdered sugar in a large bowl until smooth.
  3. Whip the heavy cream with vanilla extract in another bowl until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until well incorporated.
  5. Blend your mixed berries with 1/4 cup sugar until pureed to create the berry swirl.
  6. Pour half of the cheesecake filling into the crust. Drizzle some of the berry puree on top and create swirls. Repeat with the remaining filling and berry puree.
  7. Cover the pie and refrigerate for at least 240 minutes, or until set.

Notes

Garnish with additional berries or whipped cream before serving. This pie is best enjoyed fresh, but can be stored in the refrigerator for up to 3 days.
