Ingredients
- 2¼ cups all-purpose flour (or bread flour)
- 1 teaspoon fine sea salt
- 1 teaspoon granulated sugar
- 1 packet active dry yeast (2¼ teaspoons) or 2 teaspoons instant yeast
- ¾ cup warm water (110°F / 43°C)
- 1 tablespoon olive oil (or melted butter)
- 1 large egg, beaten with 1 tablespoon water or milk (for egg wash)
- 1 cup boiling water (for oven steam)
Instructions
- Activate the yeast by combining warm water with sugar and yeast, letting it sit until foamy, about 5–10 minutes.
- Prepare the dough by whisking together the flour and sea salt, then adding the yeast mixture and olive oil, stirring until shaggy.
- Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
- Place the dough in an oiled bowl, cover, and allow it to rise in a warm place for about 1 hour until doubled in size.
- Punch down the risen dough, divide it into portions, and shape each into mini baguettes on a lined baking sheet.
- Allow the shaped loaves to rise for another 30 minutes while preheating the oven to 425°F (220°C).
- Brush the baguettes with egg wash, score the tops, and add boiling water to a pan in the oven for steam.
- Bake for 15–18 minutes until golden brown and crispy.
- Cool on a wire rack before slicing.
Notes
For best results, ensure the dough is kneaded well and rises adequately. You can customize with herbs or spices in the dough.
