A refreshing twist on the classic Italian dessert, featuring layers of ladyfingers soaked in lemon syrup and creamy mascarpone cheese.
Ingredients
- 1/2 cup freshly squeezed lemon juice (about 3 lemons)
- 1/2 cup water
- 1/3 cup granulated sugar
- 1 1/2 cups cold heavy whipping cream
- 1 cup mascarpone cheese, room temperature
- 1/2 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 1 tablespoon lemon zest
- 1 package (200–250g) ladyfinger cookies (Savoiardi)
- Extra lemon zest or candied lemon slices for garnish
Instructions
- Combine the lemon juice, water, and granulated sugar in a small saucepan. Stir until dissolved and let cool.
- Whip the heavy cream with powdered sugar and vanilla extract in a large bowl until soft peaks form.
- Beat the mascarpone cheese and lemon zest in a separate bowl until smooth. Gently fold the whipped cream into the mascarpone mixture until incorporated.
- Dip each ladyfinger into the lemon syrup quickly and arrange in your desired dish. Spread half of the mascarpone mixture over the soaked ladyfingers and repeat layering.
- Cover the dish and refrigerate for at least 4–6 hours, allowing flavors to develop.
- Garnish with extra lemon zest or candied lemon slices before serving.
