Description

These Korean BBQ meatballs are sticky, savory, and have just the right amount of spice, making them a delightful finger food or main course option.

Ingredients

  • 1 lb ground beef (80/20 preferred)
  • 2 cloves garlic, minced
  • 2 tablespoons sesame oil
  • 1/4 cup soy sauce (low-sodium optional)
  • 1/4 cup gochujang (adjust for heat preference)
  • 2 tablespoons brown sugar
  • 1 egg, lightly beaten
  • 1/2 cup breadcrumbs (plain or panko)
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine ground beef, minced garlic, sesame oil, soy sauce, gochujang, brown sugar, beaten egg, breadcrumbs, salt, and pepper in a large bowl.
  3. Gently mix the ingredients using your hands or a fork until just combined, avoiding overmixing.
  4. Roll the mixture into 1-inch meatballs and space them evenly on the prepared baking sheet.
  5. Bake for 15–20 minutes until browned and an internal temperature reaches 160°F (71°C).
  6. Let meatballs rest for 2–3 minutes before serving, garnished with chopped green onions.

Notes

Serve with a creamy dipping sauce like spicy mayo or over rice for a complete meal.
