Description

A vibrant and zesty grilled chicken dish marinated in citrus and pineapple juice, perfect for summer cookouts.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 1 lime
  • Juice of 1 orange
  • 1/2 cup pineapple juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh cilantro, chopped
  • Salt and pepper to taste


Instructions

  1. Whisk together the olive oil, lime juice, orange juice, pineapple juice, minced garlic, chopped cilantro, salt, and pepper until well-blended.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 60 minutes or overnight for best flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade, discarding the leftover marinade.
  5. Grill the chicken for about 6-7 minutes on each side until fully cooked and the juices run clear.
  6. Let the chicken rest for a few minutes before serving.

Notes

For added flavor, marinate overnight and use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F.
