Ingredients

  • 6 large eggs
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 cup mushrooms, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • Cheese (optional, your choice of variety)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a pie dish with butter or cooking spray.
  2. Heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté until tender, about 5 minutes.
  3. Stir in the halved cherry tomatoes and fresh spinach. Cook until the spinach wilts, about 2-3 minutes.
  4. Whisk together the eggs, heavy cream, salt, and pepper in a large bowl until combined and frothy.
