Ingredients
- 8 large eggs
- 1/4 cup milk
- Salt (to taste)
- Pepper (to taste)
- 8 pre-cooked breakfast sausage links
- 8 (8-inch) flour tortillas
- 1 cup shredded cheddar cheese
- 1 tbsp butter
- Non-stick cooking spray
Instructions
- Crack the eggs into a large bowl, then add milk, salt, and pepper. Whisk until well-blended and frothy.
- In a non-stick skillet over medium heat, melt the butter. Pour the egg mixture into the skillet, gently stirring until soft and fluffy, about 5-7 minutes. Remove from heat.
- Lightly toast the tortillas in a dry skillet or microwave for a few seconds until pliable.
- On a flat surface, lay a warm tortilla. Place a sausage link at the edge, add about a tablespoon of scrambled eggs, and sprinkle shredded cheese on top.
- Tightly roll the tortilla, folding in the ends to seal the filling.
- Clean the skillet, spray with non-stick cooking spray or add butter. Heat over medium and place the roll-ups seam side down. Cook until golden brown, around 2-3 minutes per side.
- Serve warm, paired with salsa or hot sauce if desired.
