Warm, fudgy brownies topped with gooey caramel, rich chocolate, and crunchy pecans, perfect for any occasion.
Ingredients
- 10 tbsp unsalted butter
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar
- 3/4 cup unsweetened cocoa powder
- 1/2 tsp salt
- 1 tbsp instant coffee granules (optional)
- 1/2 tsp baking powder
- 2 large cold eggs
- 2 tsp vanilla extract
- 2/3 cup all-purpose flour
- 1/2 cup semi-sweet chocolate chips (plus extra for topping)
- 1/2 cup chopped pecans (plus extra for topping)
- 1 cup light brown sugar (for caramel sauce)
- 6 tbsp unsalted butter (for caramel sauce)
- 1/2 cup heavy cream (for caramel sauce)
- 1 tsp vanilla extract (for caramel sauce)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing it or lining it with parchment paper.
- Melt the butter in a medium saucepan over low heat. Stir in both sugars and cocoa powder until well combined.
- Add in the salt, coffee granules (if using), and baking powder. Then, mix in the eggs one at a time while whisking vigorously.
- Stir in the vanilla extract, folding in the all-purpose flour until just combined. The batter should be thick and fudgy.
- Gently fold in the chocolate chips and chopped pecans, saving some for topping.
- Pour the brownie batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
- While the brownies are baking, prepare the caramel sauce by combining the light brown sugar, butter, and heavy cream in a saucepan. Bring to a boil, then reduce heat and let it simmer for about 5 minutes until thickened. Stir in the vanilla extract.
- Once the brownies are done, drizzle the warm caramel sauce over the top and sprinkle with the remaining pecans and chocolate chips.
- Allow the brownies to cool for at least 30 minutes before cutting into squares.
Notes
Serve warm with vanilla ice cream or a dollop of whipped cream for an extra treat.
