Description

Warm, fudgy brownies topped with gooey caramel, rich chocolate, and crunchy pecans, perfect for any occasion.


Ingredients

  • 10 tbsp unsalted butter
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1 tbsp instant coffee granules (optional)
  • 1/2 tsp baking powder
  • 2 large cold eggs
  • 2 tsp vanilla extract
  • 2/3 cup all-purpose flour
  • 1/2 cup semi-sweet chocolate chips (plus extra for topping)
  • 1/2 cup chopped pecans (plus extra for topping)
  • 1 cup light brown sugar (for caramel sauce)
  • 6 tbsp unsalted butter (for caramel sauce)
  • 1/2 cup heavy cream (for caramel sauce)
  • 1 tsp vanilla extract (for caramel sauce)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing it or lining it with parchment paper.
  2. Melt the butter in a medium saucepan over low heat. Stir in both sugars and cocoa powder until well combined.
  3. Add in the salt, coffee granules (if using), and baking powder. Then, mix in the eggs one at a time while whisking vigorously.
  4. Stir in the vanilla extract, folding in the all-purpose flour until just combined. The batter should be thick and fudgy.
  5. Gently fold in the chocolate chips and chopped pecans, saving some for topping.
  6. Pour the brownie batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
  7. While the brownies are baking, prepare the caramel sauce by combining the light brown sugar, butter, and heavy cream in a saucepan. Bring to a boil, then reduce heat and let it simmer for about 5 minutes until thickened. Stir in the vanilla extract.
  8. Once the brownies are done, drizzle the warm caramel sauce over the top and sprinkle with the remaining pecans and chocolate chips.
  9. Allow the brownies to cool for at least 30 minutes before cutting into squares.

Notes

Serve warm with vanilla ice cream or a dollop of whipped cream for an extra treat.
