Ingredients

  • 12 large eggs
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup diced ham or cooked sausage
  • 1 cup chopped spinach (fresh or thawed)
  • 1 red bell pepper (diced)
  • 1 small onion (finely chopped)
  • 1 cup biscuit mix (like Bisquick or flour)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon nutmeg (optional)
  • Butter or oil for greasing


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish with butter or oil.
  2. Sauté the chopped onion and diced red bell pepper until tender and slightly caramelized.
  3. Beat the eggs in a large bowl and mix in the milk, salt, pepper, garlic powder, and nutmeg.
  4. Gradually add the biscuit mix into the egg mixture, stirring until well combined.
  5. Fold in the sautéed vegetables, spinach, cheese, and ham (or sausage).
