Description

A delicious summer dish combining honey lime chicken with fresh mango salsa.


Ingredients

  • 4 boneless chicken breasts
  • 1/4 cup honey
  • 2 tablespoons lime juice (plus 1 tablespoon for the salsa)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, minced (optional)
  • 1/4 cup cilantro, chopped


Instructions

  1. Whisk together the honey, lime juice, olive oil, salt, and pepper to create a marinade.
  2. Place the chicken breasts in the marinade and let them soak for at least 30 minutes.
  3. Preheat your grill or oven to medium-high heat.
  4. Grill or bake the chicken for about 6-7 minutes on each side or until cooked through, reaching an internal temperature of 165°F.
  5. Combine diced mango, red onion, jalapeño (if using), cilantro, and 1 tablespoon lime juice to prepare the salsa.
  6. Serve the chicken warm topped with fresh mango salsa and enjoy!
