Description

Delicious and fluffy homemade banana pancakes perfect for breakfast or brunch.


Ingredients

  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 4 ripe bananas, mashed (leave some lumps for texture!)
  • 4 tablespoons unsalted butter, melted (plus more for cooking)
  • 2 eggs
  • 1½ cups buttermilk
  • ½ cup brown sugar
  • 2 teaspoons pure vanilla extract


Instructions

  1. Mash the ripe bananas until smooth, leaving a few small lumps for added texture.
  2. Stir in the melted butter, eggs, buttermilk, brown sugar, and vanilla extract until well combined.
  3. Whisk together the flour, baking powder, and salt in a separate bowl.
  4. Add the dry ingredients to the banana mixture. Stir gently until just combined, being careful not to overmix!
  5. Heat a non-stick skillet or griddle over low to medium-low heat and melt a small pat of butter.
  6. Pour about ⅓ cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface and the edges appear set.
  7. Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.
  8. Repeat until all the batter is used. Enjoy the wafting scent of banana pancakes filling your home!

Notes

For a healthier version, substitute buttermilk with almond milk or use whole wheat flour.
