Ingredients

  • 6 large eggs
  • 2 cups cottage cheese
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
  • 1 cup chopped spinach
  • ½ cup diced bell pepper
  • ½ cup chopped onion
  • Garlic powder to taste
  • Onion powder to taste
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 9-inch baking dish.
  2. Whisk together the eggs and cottage cheese in a large mixing bowl until fully combined.
  3. Stir in the chopped spinach, diced bell pepper, and onion. Add garlic powder, onion powder, salt, and black pepper to taste.
  4. Fold in the shredded cheese, ensuring it’s evenly distributed.
  5. Pour the mixture into your prepared baking dish and bake for 40-45 minutes or until set and golden brown.
  6. Allow it to cool for about 5 minutes before slicing into squares and serving.
