Ingredients
- 6 large eggs
- 2 cups cottage cheese
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
- 1 cup chopped spinach
- ½ cup diced bell pepper
- ½ cup chopped onion
- Garlic powder to taste
- Onion powder to taste
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9 x 9-inch baking dish.
- Whisk together the eggs and cottage cheese in a large mixing bowl until fully combined.
- Stir in the chopped spinach, diced bell pepper, and onion. Add garlic powder, onion powder, salt, and black pepper to taste.
- Fold in the shredded cheese, ensuring it’s evenly distributed.
- Pour the mixture into your prepared baking dish and bake for 40-45 minutes or until set and golden brown.
- Allow it to cool for about 5 minutes before slicing into squares and serving.
