Description
A cozy and convenient slow cooker meal featuring tender chicken, baby potatoes, and carrots infused with garlic-butter flavor.
Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1.5 lbs baby red potatoes, quartered
- 1 lb whole carrots, peeled and cut into chunks
- 6 cloves garlic, minced
- 1/2 cup unsalted butter, melted
- 1 tbsp Italian seasoning
- 1 tsp salt (adjust to taste)
- 1/2 tsp freshly ground black pepper
- 1/2 cup chicken broth
- 1 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Quarter the baby red potatoes and chop the carrots into 1–2 inch chunks. Pat the chicken dry with paper towels.
- Place the potatoes and carrots in the bottom of the slow cooker.
- Lay the chicken on top of the vegetables.
- Whisk together melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth until combined.
- Pour the garlic butter sauce evenly over the chicken and vegetables.
- Cover and cook on LOW for 360–420 minutes or on HIGH for 180–240 minutes.
- Taste and adjust seasoning with salt or pepper if needed. Sprinkle with chopped parsley before serving if desired.
Notes
For a thicker sauce, remove chicken and veggies when done, whisk 1-2 teaspoons cornstarch with cold water, add to the slow cooker, and cook on HIGH for 10-15 minutes to thicken.
