Description

A delightful salad combining vibrant flavors and fresh ingredients, perfect for a light lunch or a side dish.


Ingredients

  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes before fluffing it with a fork.
  3. In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, and Kalamata olives.
  4. Once the couscous is fluffed, add it to the bowl with the vegetables and mix everything together gently.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the salad and toss gently to coat.
  7. Finally, fold in the crumbled feta cheese and fresh parsley just before serving. Chill if preferred.
  8. Enjoy cold or at room temperature.

Notes

Prepping your vegetables and couscous ahead of time can make assembly easier. Feel free to swap in seasonal vegetables.
