  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (dairy or non-dairy)
  • 1 large egg
  • 2 tablespoons melted butter (or cooking oil)
  • Fresh fruit (such as strawberries, blueberries, or bananas)
  • Maple syrup


Instructions

  1. Whisk together the flour, sugar, baking powder, and salt in a large bowl until well combined.
  2. Mix the milk, egg, and melted butter in another bowl until you achieve a smooth consistency.
  3. Gently pour the wet mixture into the dry ingredients, stirring just enough to combine without over-mixing.
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease it.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm topped with fresh fruit and drizzled with maple syrup.

Notes

Letting the batter rest for a few minutes can make the pancakes fluffier. Don’t overmix the batter to keep them light and airy.
