Description

Ingredients

  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup applesauce
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)
  • Cream cheese frosting for topping


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Combine the grated carrots, granulated sugar, brown sugar, vegetable oil, applesauce, and eggs in a large mixing bowl. Mix well.
  3. Whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
  4. Fold the dry mixture into the wet mixture, stirring gently until just combined. Add nuts or raisins if using.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool completely before frosting the bars with cream cheese frosting.
