Description

A versatile crustless quiche that’s perfect for any meal, easy to make and customizable with your favorite vegetables.


Ingredients

  • 6 large eggs
  • 1 cup milk (dairy or non-dairy)
  • 1 cup shredded cheese (cheddar or Swiss)
  • 1 cup chopped vegetables (spinach, bell peppers, onions, etc.)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk the eggs and milk until they are well combined.
  3. Stir in the shredded cheese and chopped vegetables, seasoning with salt and pepper to taste.
  4. Consider sautéing the vegetables in olive oil for a richer flavor.
  5. Grease a pie dish with cooking spray or a little oil.
  6. Pour the egg mixture into the prepared dish.
  7. Bake for 30-40 minutes until the quiche is set and lightly golden on top.
  8. Allow to cool slightly before slicing and serving.

Notes

Store leftover quiche in an airtight container in the refrigerator for 3-5 days; it can also be frozen for later use.
