A versatile crustless quiche that’s perfect for any meal, easy to make and customizable with your favorite vegetables.
Ingredients
- 6 large eggs
- 1 cup milk (dairy or non-dairy)
- 1 cup shredded cheese (cheddar or Swiss)
- 1 cup chopped vegetables (spinach, bell peppers, onions, etc.)
- Salt and pepper, to taste
- 1 tablespoon olive oil (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk the eggs and milk until they are well combined.
- Stir in the shredded cheese and chopped vegetables, seasoning with salt and pepper to taste.
- Consider sautéing the vegetables in olive oil for a richer flavor.
- Grease a pie dish with cooking spray or a little oil.
- Pour the egg mixture into the prepared dish.
- Bake for 30-40 minutes until the quiche is set and lightly golden on top.
- Allow to cool slightly before slicing and serving.
Notes
Store leftover quiche in an airtight container in the refrigerator for 3-5 days; it can also be frozen for later use.
