Description

A quick and indulgent creamy Parmesan chicken skillet that is perfect for busy weeknights.


Ingredients

  • 2 skinless, boneless chicken breasts (about 1 to lb total)
  • Salt and freshly ground black pepper, to taste
  • 12 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 2 cups fresh spinach (loosely packed)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Pat the chicken dry and season both sides with salt and pepper. If breasts are thick, slice them into cutlets about ¾-inch thick for even cooking.
  2. Heat a large skillet over medium heat. Add the olive oil and butter; swirl until the butter melts and foams.
  3. Place the chicken in the skillet and sear without moving until the first side is golden, about 6–7 minutes. Flip and continue cooking until the internal temperature reaches 165°F, about another 6–7 minutes depending on thickness.
  4. Transfer the cooked chicken to a plate and tent loosely with foil to rest while you make the sauce.
  5. Reduce the heat to medium-low. Add the minced garlic to the same skillet and sauté briefly, about 30 seconds, until fragrant.
  6. Add the fresh spinach and toss until just wilted, about 1–2 minutes.
  7. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan a little at a time until the sauce thickens.
  8. Return the chicken to the skillet and spoon the sauce over each piece. Simmer on low for 1–2 minutes to allow flavors to meld.

Notes

Serve with pasta, rice, or mashed potatoes to soak up the sauce. Can be prepared ahead of time.
