Description
A comforting and creamy casserole with shredded chicken, broccoli, and a rich cream-cheese sauce topped with melted cheddar, perfect for low-carb meal plans.
Ingredients
- 2 cups shredded cooked chicken
- 3 cups broccoli florets
- 4 oz cream cheese, softened
- 1/2 cup heavy cream
- 1 tablespoon butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese, divided
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter.
- Steam the broccoli florets until just tender, about 4–6 minutes. Drain well and pat dry.
- Make the cream sauce by melting butter over low–medium heat, then whisk in softened cream cheese and heavy cream until smooth. Stir in garlic powder, onion powder, salt, and pepper.
- Combine the shredded chicken and steamed broccoli in a bowl. Pour the warm sauce over and toss until coated.
- Transfer the mixture to the greased baking dish, sprinkle three-quarters of the cheddar on top, and bake for 20–25 minutes. Broil for 1–2 minutes to brown if desired. Let rest for 5 minutes before serving.
Notes
Tip: Use room-temperature cream cheese to help it melt smoothly and avoid lumps. Ensure broccoli is dry to prevent watery casserole. Adjust seasoning before baking.
