Description

Succulent shrimp seared and coated in a rich, garlicky cream sauce served over fluffy mashed potatoes for a comforting weeknight meal.


Ingredients

  • 1 pound shrimp, peeled and deveined (1620 count)
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons chopped fresh parsley
  • 4 cups mashed potatoes, warm


Instructions

  1. Pat the shrimp dry with paper towels and season both sides with salt and black pepper.
  2. Heat a large skillet over medium heat and add the olive oil.
  3. Add the shrimp in a single layer and cook for 2–3 minutes per side until pink and opaque.
  4. Transfer the cooked shrimp to a plate and keep warm.
  5. Reduce the heat to medium-low and add the butter to the skillet; let it melt.
  6. Add the minced garlic and sauté for about 30 seconds until fragrant.
  7. Pour in the heavy cream and raise to a gentle simmer.
  8. Return the shrimp to the skillet and stir to coat, warming for 1–2 minutes.
  9. Spoon warm mashed potatoes onto plates, top with shrimp and sauce, garnish with parsley, and serve.

Notes

For a lighter sauce, substitute with half-and-half or milk plus a splash of butter. Serve hot for best flavor.
