Description
A quick and creamy one-skillet meal featuring tender orzo, chicken sausage, and broccoli finished with Parmesan cheese.
Ingredients
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 pound chicken sausage, sliced
- 2 cups broccoli florets
- 2 cups low-sodium chicken broth
- 1/2 cup grated Parmesan cheese, plus extra for serving
- Salt and freshly ground black pepper, to taste
- Optional: 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder
Instructions
- Heat a large skillet over medium heat, then add the olive oil and let it warm for 30 seconds.
- Add the sliced chicken sausage; cook until browned on both sides — about 4–6 minutes for pre-cooked sausage, or 8–10 minutes for raw sausage.
- Stir in the broccoli and cook 2–3 minutes until bright green.
- Add the orzo, chicken broth, and optional garlic and onion powders. Stir to combine and bring to a boil.
- Reduce heat to low, cover, and simmer for 10–12 minutes, stirring once halfway through.
- Remove the skillet from the heat. Stir in the grated Parmesan until melted and glossy.
- Serve immediately with extra Parmesan on the side.
Notes
For a dairy-free option, swap nutritional yeast for Parmesan. For a richer sauce, stir in cream or mascarpone at the end.
