Description

Ingredients

  • 1 lb chicken breast, sliced thin
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 8 oz mushrooms, sliced (cremini or white button)
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, loosely packed
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Cooked rice, mashed potatoes, or pasta, for serving


Instructions

  1. Pat the chicken slices dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat, then add chicken and cook until golden. Remove and let rest.
  3. Add sliced mushrooms to the same skillet and cook until browned, then stir in minced garlic.
  4. Return the chicken to the skillet and add spinach, stirring until wilted.
  5. Pour in heavy cream, bringing to a gentle simmer, then stir in Parmesan cheese until the sauce thickens.
  6. Season with salt and pepper as needed, then serve over rice, mashed potatoes, or pasta.

Notes

For a lighter option, substitute a lower-fat cream and increase Parmesan. Let chicken rest after searing for better texture.
