Ingredients
- Chicken (breast or thighs)
- Egg noodles
- Carrots
- Celery
- Onions
- Garlic
- Chicken broth
- Thyme
- Bay leaves

Instructions
- Heat olive oil in a large pot. Sauté diced onions, minced garlic, chopped celery, and sliced carrots until tender.
- Add chicken pieces, seasoned with salt and pepper, and brown slightly on all sides.
- Pour in chicken broth, then add bay leaves and thyme. Bring to a gentle simmer.
- Remove chicken after 20 minutes, shred it, and return it to the pot.
- Stir in egg noodles and cook until tender. Adjust seasoning as needed.
- Serve hot, garnished with fresh parsley.
Notes
