Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup cottage cheese (approx. 226 g)
  • 1 cup corn (fresh, canned, or thawed frozen)
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 tsp taco seasoning
  • Salt and pepper, to taste
  • 1 avocado, diced
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving


Instructions

  1. Prepare the shredded chicken and mix-ins: Shred chicken into bite-size pieces and place it in a large mixing bowl with corn, black beans, and diced tomatoes.
  2. Add the cottage cheese into the bowl with the shredded chicken and vegetables.
  3. Season the mixture with taco seasoning, salt, and pepper. Stir and adjust seasoning as needed.
  4. Gently combine everything until evenly mixed, avoiding over-stirring to keep the cottage cheese texture light.
  5. Portion the mixture into serving bowls and top with diced avocado and chopped cilantro.
