Ingredients

  • 3 pounds boneless skinless chicken thighs or chicken breasts (sliced in half)
  • 2 tsp olive oil
  • 4-5 tbsp water (optional, for pan frying)
  • 1 can (7 oz) chipotle peppers in adobo sauce
  • 4 tbsp fresh lime juice
  • 4 tbsp fresh orange juice
  • 1/2 cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion (quartered)
  • 1 tsp cumin
  • 1 tbsp dried oregano
  • 1 tsp ground coriander (optional)
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp pepper


Instructions

  1. Combine the chipotle peppers, lime juice, orange juice, cilantro, garlic, onion, cumin, oregano, coriander (if using), smoked paprika, salt, and pepper in a blender. Blend until smooth.
  2. Marinate the chicken in this vibrant sauce for at least one hour; overnight is even better.
  3. Preheat your grill, oven, or air fryer.
  4. Cook the chicken over medium heat if grilling, about 6-7 minutes on each side until it reaches an internal temperature of 165°F. For oven roasting, place on a baking sheet and roast at 425°F for 25-30 minutes. In an air fryer, set it at 400°F for 18-20 minutes.
  5. Let the chicken rest for a few minutes before slicing and serving.

Notes

Allowing the chicken to marinate overnight enhances the flavors. Use a meat thermometer for perfect doneness.
