Description

A creamy and comforting casserole that layers a rich cheese mixture with marinara and colorful vegetables, perfect for weeknight dinners or brunch.


Ingredients

  • 2 cups cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped vegetables (bell peppers, onions, spinach)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1/2 cup cooked and crumbled turkey sausage or ground beef (optional)
  • 1 cup cauliflower rice (optional)


Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8×8 inch baking dish.
  2. Combine cottage cheese, mozzarella, Parmesan, Italian seasoning, garlic powder, salt, and pepper in a large bowl and mix until well combined.
  3. Fold in chopped vegetables and optional protein if using.
  4. Spread half of the marinara sauce in the baking dish and layer the cheese mixture on top, then add the remaining marinara sauce.
  5. Bake for 30–35 minutes until bubbling and golden on top.
  6. Let cool for 5–10 minutes before serving.

Notes

Optional ingredients like turkey sausage and cauliflower rice can increase protein and bulk consistently. Allow the casserole to rest before serving for neater slices.
