Delicious breakfast enchiladas filled with scrambled eggs, crumbled sausage, cheese, and crispy hash browns, smothered in rich sausage gravy.
Ingredients
- 6 eggs, scrambled
- 1 pound crumbled sausage
- 2 cups cheese (your choice)
- 1 cup hash browns or roasted potatoes
- 4 tortillas
- 1/2 pound sausage for the gravy
- 2 tablespoons flour
- 2 cups milk
- Seasonings to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the crumbled sausage in a large skillet over medium heat until browned, then remove and set aside.
- Scramble the eggs in the same skillet and combine them with the cooked sausage, hash browns, and cheese.
- Spoon the filling mixture onto each tortilla and roll them tightly, placing them seam-side down in a greased baking dish.
- Cook the remaining sausage in the skillet until browned for the gravy, then sprinkle in the flour and stir.
- Whisk in the milk gradually and cook until the gravy thickens, seasoning to taste.
- Pour the gravy over the enchiladas in the baking dish.
- Bake for about 20 minutes until heated through and cheese is melted.
Notes
