A delightful twist on a breakfast classic, this casserole brings together creamy cream cheese and fresh blueberries layered between soft bread, perfect for brunch.
Ingredients
- 1 loaf of French or brioche bread
- 8 ounces of cream cheese, softened
- 1 cup of blueberries (fresh or frozen)
- 6 large eggs
- 1 cup of milk
- 1/2 cup of heavy cream
- 1/4 cup of maple syrup
- 1 teaspoon of vanilla extract
- 1 teaspoon of cinnamon
- Powdered sugar for serving
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Cut the bread into cubes and layer half of them in the prepared dish.
- In a mixing bowl, combine the softened cream cheese with the blueberries, then spoon this mixture over the bread cubes.
- Top with the remaining bread cubes.
- In another bowl, whisk together the eggs, milk, heavy cream, maple syrup, vanilla, and cinnamon until well-blended.
- Pour the egg mixture evenly over the layered bread and cover with foil.
- Refrigerate it for at least one hour or overnight for best results.
- When ready to bake, cover with foil and bake for 30 minutes, then remove the foil and bake for another 15-20 minutes until the top is golden and set.
- Serve warm, dusted with powdered sugar.
