Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 4 large eggs, separated
  • 1/2 cup water
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups fresh blueberries
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl until well combined.
  3. Mix the egg yolks, vegetable oil, and water in another bowl until smooth.
  4. Gradually pour the wet mixture into the dry ingredients, stirring until you achieve a well-blended batter.
  5. Whip the egg whites in a separate bowl until they form stiff peaks. Gently fold them into the batter.
  6. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cake to cool completely before removing it from the pan.
  8. Serve with blueberry compote and whipped cream if desired.
