Description

A decadent breakfast featuring thick slices of bread filled with cream cheese and blueberries, enveloped in a cinnamon-kissed egg batter.

Ingredients

  • 6 slices thick-cut bread
  • 1 cup cream cheese, softened
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon cinnamon
  • Butter for cooking
  • Maple syrup for serving

Instructions

  1. Combine the softened cream cheese, sugar, and vanilla extract in a mixing bowl until smooth. Fold in the blueberries gently.
  2. Spread the cream cheese mixture onto three slices of bread, then top with the remaining slices to form sandwiches.
  3. Whisk the eggs, milk, and cinnamon together in another bowl until well blended.
  4. Heat a skillet over medium heat and melt a tablespoon of butter.
  5. Dip each sandwich into the egg mixture, ensuring both sides are well-coated.
  6. Cook the sandwiches in the skillet until golden brown, about 3-4 minutes on each side.
  7. Serve warm, drizzled with maple syrup.

Notes

Use room temperature cream cheese for a smooth filling. For extra flavor, add lemon zest to the cream cheese mixture.
