Ingredients
- 1 can black beans (rinsed and drained)
- 1 can corn (drained)
- 1 red bell pepper (diced)
- 1/2 red onion (diced)
- 1 jalapeño (minced)
- 1/4 cup cilantro (chopped)
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Combine the rinsed black beans and drained corn in a large mixing bowl.
- Add the diced red bell pepper and diced red onion to the bowl.
- Stir in the minced jalapeño to add a kick of heat.
- Toss in the chopped cilantro, bringing freshness to the mix.
- Squeeze the lime juice over everything and season generously with salt and pepper.
- Mix all the ingredients together until evenly incorporated.
- For optimal flavor, let the salsa chill in the refrigerator for about an hour before serving or enjoy it right away.
Notes
For a milder salsa, swap the jalapeño for a milder pepper. Can add diced tomatoes or avocados for extra flavor and texture.
