Description

Ingredients

  • 1 can black beans (rinsed and drained)
  • 1 can corn (drained)
  • 1 red bell pepper (diced)
  • 1/2 red onion (diced)
  • 1 jalapeño (minced)
  • 1/4 cup cilantro (chopped)
  • Juice of 1 lime
  • Salt and pepper to taste


Instructions

  1. Combine the rinsed black beans and drained corn in a large mixing bowl.
  2. Add the diced red bell pepper and diced red onion to the bowl.
  3. Stir in the minced jalapeño to add a kick of heat.
  4. Toss in the chopped cilantro, bringing freshness to the mix.
  5. Squeeze the lime juice over everything and season generously with salt and pepper.
  6. Mix all the ingredients together until evenly incorporated.
  7. For optimal flavor, let the salsa chill in the refrigerator for about an hour before serving or enjoy it right away.

Notes

For a milder salsa, swap the jalapeño for a milder pepper. Can add diced tomatoes or avocados for extra flavor and texture.
