Indulge in rich chocolate and warm Biscoff cookie butter with these decadent brownies.
Ingredients
- 3/4 cup Biscoff cookie butter
- 1/2 cup light or dark brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 1 large egg yolk
- 1 tablespoon vanilla extract
- 10 tablespoons unsalted butter
- 2/3 cup semi-sweet chocolate chips
- 1/4 cup unsweetened Dutch cocoa powder
- 2/3 cup all-purpose flour
- 1 teaspoon espresso powder
- 1/2 teaspoon fine sea salt
- 4-5 Biscoff cookies (for topping)
- Extra cookie butter (for drizzling)
Instructions
- Press parchment paper into an 8×8 square baking pan, spreading some Biscoff cookie butter inside before chilling it until firm.
- Preheat your oven to 350°F (180°C).
- In a mixing bowl, whisk together the brown sugar, granulated sugar, eggs, and vanilla extract until combined.
- Melt the butter and chocolate chips in the microwave, whisking in the cocoa powder afterwards.
- Combine the melted chocolate mix with the egg mixture. Fold in the flour, espresso powder, and salt until just blended.
- Pour half the batter into your prepared pan, then add dollops of frozen Biscoff cookie butter. Top with the remaining batter.
- Press the Biscoff cookies into the top before drizzling with melted cookie butter.
- Bake for 30-40 minutes, or until a toothpick inserted comes out with moist crumbs.
- Allow the brownies to cool on a wire rack and drizzle with more cookie butter before slicing.
Notes
Best served warm with a scoop of vanilla ice cream or a dollop of whipped cream. Store in an airtight container for up to 5-7 days.
