A versatile and comforting frittata casserole, perfect for breakfast, lunch, or dinner with a delightful blend of vegetables and cheese.

Ingredients

  • 8 large eggs
  • 1 cup milk
  • 2 cups diced vegetables (spinach, bell peppers, onions, etc.)
  • 1 cup shredded cheese (cheddar, mozzarella, etc.)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs, milk, salt, pepper, and garlic powder until fully combined.
  3. Heat the olive oil in a skillet over medium heat and add the diced vegetables. Sauté until softened, around 5-7 minutes.
  4. Grease a baking dish and spread the sautéed vegetables evenly across the bottom.
  5. Pour the egg mixture over the sautéed vegetables, ensuring an even distribution.
  6. Top with the shredded cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until set and golden on top.
  8. Allow to cool slightly before slicing and serving.

Notes

Enjoy with a fresh side salad or crusty bread. Can be stored in the fridge for up to 5 days or frozen for 3 months.
