Description

Crispy on the outside and soft on the inside, these potato wedges are a simple and delicious side dish or snack.


Ingredients

  • 32 oz waxy potatoes (about 4 large potatoes)
  • 1½ teaspoons paprika (smoked or sweet)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 12 tablespoons low-fat cooking spray or olive oil


Instructions

  1. Preheat your oven to 400°F (200°C) and position a rack in the middle.
  2. Wash potatoes well and pat dry. Cut each potato lengthwise into wedges.
  3. In a small bowl, whisk together paprika, garlic powder, and onion powder.
  4. Put the wedges into a large mixing bowl. Lightly spray them with cooking spray or drizzle with oil and toss to coat.
  5. Add the spice mix, then toss again until every wedge has a light coating. Season with sea salt and pepper to taste.
  6. Arrange the wedges cut-side down in a single layer on a baking sheet.
  7. Bake for 35–40 minutes, turning once halfway through, until golden brown and cooked through.
  8. Serve hot right away for the crispiest edges.

Notes

For extra-crisp skin, broil for 1–2 minutes at the end. Use a heavy sheet pan or preheated baking stone for better crisping.
