A fast, flavor-packed BBQ chicken flatbread pizza with tangy sauce, shredded chicken, and melty mozzarella.
Ingredients
- 2 flatbreads (8–10 inches)
- 1 cup cooked chicken breast, shredded
- 1/2 cup BBQ sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F (200°C). Place a rack in the center.
- Toss the shredded chicken with 1/2 cup BBQ sauce until evenly coated.
- Brush both flatbreads with olive oil and place them on a baking sheet.
- Divide the BBQ-coated chicken between the flatbreads, leaving a 1/2-inch border for the crust.
- Sprinkle mozzarella evenly over the chicken, then scatter the red onion on top.
- Bake for 10–12 minutes, or until the cheese is melted and bubbling. Broil for 30–60 seconds for a crispy finish.
- Remove from the oven, sprinkle with cilantro, and let rest for 1–2 minutes before slicing into wedges.
Notes
For a smoky flavor, try adding smoked gouda or Monterey Jack cheese. Gluten-free options include gluten-free flatbreads. For a vegetarian dish, substitute shredded jackfruit or BBQ tofu for the chicken.
