Description
A crispy, creamy, sweet and spicy appetizer featuring large shrimp, perfect for any gathering.
Ingredients
- 1 pound large shrimp, peeled and deveined, tails removed
- 1/2 cup buttermilk
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp black pepper
- 3/4 cup cornstarch
- 1/4 cup high-quality mayonnaise
- 1 1/2 tablespoons Thai sweet chili sauce
- 1–2 teaspoons Sriracha hot sauce (to taste)
Instructions
- In a medium bowl, combine shrimp, buttermilk, salt, garlic powder, onion powder, and black pepper. Stir to coat and let sit for about 10 minutes.
- Pour cornstarch into a shallow dish and spread into an even layer for easy dredging.
- One at a time, dredge each shrimp in cornstarch until evenly coated. Shake off excess and place on a baking sheet or tray.
- In a large, heavy pot, pour oil to a depth of about 1 1/2 inches and heat to 350°F.
- Gently lower shrimp into the oil without crowding; fry for about 2 minutes, or until crispy and golden.
- Use a slotted spoon to transfer shrimp to a paper towel-lined plate to absorb excess oil.
- In a bowl, whisk together mayonnaise, Thai sweet chili sauce, and Sriracha. Taste and adjust as preferred.
- Place the warm fried shrimp into a large bowl, pour the sauce over, and toss until every shrimp is coated.
- Arrange on a platter and garnish with chopped green onions or sesame seeds and fresh lime wedges.
- Serve immediately for best texture.
Notes
Use fresh or properly thawed frozen shrimp. Mayonnaise can be swapped for Greek yogurt for a tangier version.
